What does First Day of Harvest mean? It means the olive oil is produced only from the first harvest day. To understand what it really means, you need to know the relationship between harvest time and oil quality. Typically, farmers choose the peak time to start harvesting just before the olives ripen. In Spain, the ideal time for the harvest season starts in late October and runs through December. Virgin olives from the early harvest season produces the best quality oil, but is limited in quantity due to lower oil content. By contrast, ripe olives from the late harvest season produces the poorest quality oil, but produces the highest yield due to much higher oil content. As you can guess, oil from the earliest harvest (i.e., first day of harvest) is the freshest and has the most flavor.
If the farmers waited just a few more days to harvest the riper olives, they would have extracted at least twice the amount of oil, but it would not be as high quality or flavorful. That is what makes the Picualia First Day of Harvest Limited Edition so extraordinary.
